A fresh springtime salad with a light lemony dressing
Ingredients
1lb fresh Brussel Sprouts, trimmed of stems and wilted leaves
3 green onions, trimmed
Vinaigrette:
¼ cup live oil
Juice from 1 lemon, or 3 tablespoon, bottled lemon juice
1Tbsp white wine vinegar
¼ teaspoon salt
¼ teaspoon pepper
1teaspoon sugar
1 teaspoon garlic powder
½each dried basil, oregano, thyme
1 teaspoon dried parsley
Optional, ¼ teaspoon dried red pepper flakes
To finish:
¼ cup grated Parmesan cheese

Instructions
Place trimmed brussel sprouts and trimmed green onion in food processor and pulse until finely chopped.
Combine vinaigrette ingredients and combine Brussel sprouts and green onions. Top with Parmesan cheese before serving
