Easy Spinach Dip

An excellent way to eat fresh spinach in an appetizer. Every time I have served this I get rave reviews & people are astonished how easy it is to make. I make it using my mini Cuisinart for a single batch; if doubling then I use my larger Cuisinart. Get ready for the compliments!




1 10 oz. package of frozen chopped spinach, thawed 3-4 green scallions 1-2 tablespoon chopped fresh dill (optional) 1-2 tablespoon chopped fresh parsley 1 cup Hellman's mayonnaise (must be real mayonnaise - no substitutions or the taste will be altered) 1 teaspoon garlic salt

Completely thaw chopped spinach & drain out all water using a colander to dry spinach. Wring out excess water by hand or with a clean kitchen towel. Chop scallions, dill, & parsley in fine pieces using your Cuisinart food processor's chopping blade. Add spinach to the mixing bowl in smaller clumps. Then add mayonnaise to blend all together well, leaving some texture to the dip. Add garlic salt to taste. Avoid over processing. Chill & serve. Excellent with carrots & celery or tortilla chips.
