An easy to make delicious eggplant salad

Ingredients
1 Large eggplant
1 red Pepper
1 Yellow Pepper
1 Orange pepper
½ bunch Dill
4 tablespoon vinegar
½ teaspoon salt

Instructions
Preheat your oven to 400°
Wash the eggplant and cut into cubes.
Spray a cookie sheet with oil spray
Put in eggplant on single layer
Cut the peppers into rings put on top of eggplant
Bake for one hour or until the eggplant is browned
Remove from oven and add the vinegar and finely chopped dill
Mix well
