Cranberry Salsa


1 12 ounce package fresh cranberries 1 Granny Smith Apple, cored and cut into 1/8s 1/2 red bell pepper 1/2 red onion 2 tablespoons jalapeno pepper, chopped 3/4 cup sugar 1/3 cup apple juice 3 tablespoons fresh cilantro, chopped 1 teaspoon fresh lime zest

Place cranberries, apple, pepper, onion and jalapeno pepper in food processor and pulse until coarsely chopped. Place in a glass bowl and combine with sugar, apple juice, cilantro and lime zest. Mix thoroughly and refrigerate. Serve with tortilla chips. Or for a festive holiday appetizer make your own by using cookie cutters to cut shapes from spinach tortillas and bake for 8 minutes at 375°.
