Crab Deviled Eggs

Kicked up deviled eggs!




1 dozen eggs ¾ cup lump crab or imitation leg meat 1 Tbsp yellow mustard ⅓ - ½ cup mayo ¼ teaspoon cayenne 1 Tbsp capers Salt & pepper to taste

Hard boil your eggs by bringing eggs & water to a boil then turn off heat cover, & let stand 20 minutes. Pour off hot water & let cool. Slice eggs in half (I like to use something with a pretty edge like a garnisher to do this). Remove yolks to medium size bowl. Add the remaining ingredients reserving the capers for garnish. If you like your eggs a little creamier, add ½ mayo instead of ⅓. Mix lightly to incorporate. Careful not to break up the crab too much. Fill each egg halves with crab mixture using a small cookie scoop. Top with 2 or 3 capers & enjoy.
