Being from Texas, my family and friends like everything spicy. So I came up with this twist of adding chipotle peppers to everyone's favorite French Onion Dip... homemade, of course. You can add more or less to suit your spicy intake ability!
2 large yellow onions, cut in half and sliced thinly
1/2 stick unsalted butter
1/4 cup canola oil
1 tsp. kosher salt
1 tsp. freshly ground black pepper
4 oz cream cheese, softened
1/2 cup mayonnaise
1/2 cup sour cream
1 tbsp chopped chipotle with sauce from can of chipotles in adobo sauce

Melt butter with canola oil in large sauce pan over medium high eat. When butter bubbles subside, add onions, salt and pepper to pan. Saute', coating all the onions with the butter mixture. Stir occasionally for 10 minutes. Lower heat to medium, and cook, stirring occasionally for another 10 minutes. Lower heat to medium low and cook onions another 10-20 minutes, stirring occasionally, until caramelized to a dark brown. Take off heat and cool. In the bowl of an electric mixer, place the softened cream cheese, sour cream, mayonnaise and chipotle pepper and sauce. Blend until smooth. Add the cooled onions and mix until combined. Serve at room temperature.
