This is a delicious chilled chicken and rice salad, the cashews are the key ingredient as they really bring the flavoring and texture of the salad together. This is a favorite of mine that has been passed down from my mother.
3 cups cooked brown rice
2 cups (10oz) cubed cooked chicken
½ cup sliced celery
¼ cup sliced pitted ripe olives
2 tablespoon sliced green onions
½ cup mayonnaise
¼ cup creamy Italian dressing
½ cup coarsely chopped cashews

In mixing bowl combine cooked rice, chicken, celery, olives and green onions. Stir together mayonnaise and Italian dressing. Add to chicken mixture, tossing gently to coat. Cover to chill. Just before serving, add cashews and toss again. Serve in lettuce lined bowl.
