Makes 150 cheese coins

These tender and flavorful appetizers are easy to make, convenient to serve and they can be
refrigerated or frozen.

Ingredients

  • 1 pound Cheddar, cut into
  • 1-inch pieces
  • ½ pound unsalted butter, room
  • temperature, cut into 1-inch pieces
  • ½ teaspoon kosher salt
  • ½ teaspoon hot sauce or pinch
  • of cayenne pepper
  • 2 cups unbleached, all-purpose flour

Preparation

  1. Insert medium shredding disc. Shred cheese
  2. using medium pressure. Reserve cheese;
  3. remove disc. Insert metal blade. Add shredded
  4. cheese, butter, salt and hot sauce or cayenne.
  5. Process for 30 seconds, scrape work bowl.
  6. Process about 30 seconds more, until smooth.
  7. Scrape work bowl. Add flour and process
  8. until incorporated.
  9. Divide dough into equal parts and roll each
  10. into a cylinder about 1½ inches in diameter.
  11. Chill until firm, about 2 hours.
  12. Preheat oven to 400°F. Cut dough into 1⁄8-inch
  13. slices and place slices 1½ inches apart on
  14. lightly greased baking sheet. Bake until lightly
  15. colored, about 10 minutes, being careful not
  16. to brown them. Transfer to wire rack to cool
  17. slightly.
  18. Unbaked, plastic-wrapped cylinders keep for
  19. about a week in the refrigerator. Baked
  20. appetizers can be frozen and reheated for
  21. 6 to 8 minutes in a 300°F oven.
