Cheese and Onion Quinoa Balls

High in protein and portable. Delicious!


48 ping pong size balls


2 cups white quinoa, cooked and cooled 1 cup Kraft Parmesan Cheese 4 scallions, sliced thin 4 eggs, beaten 2 T. olive oil 2 t. black pepper

Combined all ingredients in large mixing ball. Roll mixture into approximately 48 ping pong size balls. Place balls on lightly olive oiled greased baking sheet. Lightly spray top of balls with olive oil cooking spray. Bake on 350 degrees for approximately 20 minutes or until balls on golden brown. Remove from oven and allow to cool approximately 5 minutes. Remove from baking sheet and allow to cool completely. Store in air tight containers or storage bags. Enjoy!!!
