Caramelized Onion Dip - 3 1/2 Cups

4 tablespoons unsalted butter 2 tablespoons extra virgin olive oil 2 cups finely chopped onions 1⁄4 teaspoon cayenne pepper 1 teaspoon kosher salt 1⁄2 teaspoon freshly ground black pepper 8 ounces low-fat cream cheese, at room temperature, cut into 1-inch pieces 3⁄4 cup lowfat sour cream 1⁄2 cup lowfat mayonnaise

Instructions

Heat butter and oil in a large Cuisinart® skillet (12-inch or 5 1⁄2 quart sauté) using medium heat. Add the chopped onions, cayenne, salt and pepper. Sauté for 10 minutes, stirring occasionally. Reduce the heat to medium-low and cook for an additional 20 to 25 minutes, until the onions are browned and caramelized. Let cool completely. Place the cream cheese, sour cream and mayonnaise in a medium bowl. Mix on Speed 1 for 1 minute, then increase speed to Speed 2 for an additional 2 minutes until light and fluffy. Add half the cooled onions, and mix on Speed 3 for 1 minute. Add remaining onions and mix on Speed 1 until blended. Taste and adjust seasonings as necessary. Serve with chips or fresh vegetable crudité dippers.
