2 loaves french bread
6-8 plum tomatoes coarsely chopped
3-4 garlic cloves minced
salt and pepper (to taste)
3 tablespoon fresh basil (chiffonade)

Preheat oven to 450. Slice baguettes and arrange on cookie sheet. Drizzle with EVOO and salt and pepper. Bake in oven until golden about 20 minutes.
Toss all remaining ingredients together. Top bread with tomato mixture- let sit 15 min before serving.
