A delicious, unusual, simple appetizer. Served on sourdough bread and paired with a salad, it serves as a delicious and nutritious dinner. (It tastes like the Gorgonzola Cheese Fondue we ate at The Melting Pot).
2.5 ounces Crumbled Blue Cheese
1 garlic clove, smashed
salt and pepper to taste

Add all ingredients to a food processor and blend until smooth.
Spread on slices of sourdough bread or serve as a dip with crackers.
Does NOT keep well. Use immediately. Recipe can easily be halved.
