These are my son's favorite appetizer... I have been making them for about 15 years. They taste fabulous and you would never know they are low in fat.

Ingredients
12 hard cooked eggs
½ cup low fat cottage cheese
2 green pepper slices
1 tablespoon Dijon mustard
Season to taste (salt, thyme)
Paprika

Instructions
Peel chilled eggs, slice in half, and remove yolks. Chop green pepper in Cuisinart, and add cottage cheese, one egg yolk, mustard to machine; blend til smooth, adding seasonings to taste. Spoon mix into eggs, and carefully garnish with paprika. (Reserve remaining yolks for another use)
