These addictive spinach and cheese bars are quick and easy and can be served hot or cold - making a great appetizer or even a quick side dish for brunch.
3 tablespoon butter
1 cup flour
1 cup milk
1 teaspoon salt
1 teaspoon baking powder
½ lb grated cheddar cheese
1 10oz package frozen spinach (thawed and drained)
1 small onion, chopped

Preheat oven to 350 degrees.
Melt butter and pour in a 9 x 13 pan
Place all ingredients together in the bowl of your stand mixer. Mix on slowest setting until combined (about 1 minute). Pour mixture over the butter and bake at 350 degrees for 35 minutes or until golden brown on top.
Let the bars cool for 5 minutes and slice. You can make them as large or small as you like. These bars are good served hot or cold - great for appetizers or brunch!
