1 bunch arugula
½ lb gruyere cheese shredded or sliced thin
puff pastry sheets
1 egg & 3 teaspoon water mixed

defrost puff pastry sheets and roll until thin on lightly floured surface.
layer with cheese then a large handful of arugula. Roll tightly. Slice ¼ inch thick and place on cookie sheet. Brush with egg and water mixture. Bake for 10 minutes or until golden remove. Remove and serve
