This is a fabulous appetizer or main course for a light dinner.
2 14 oz cans artichoke hearts in water
3 cloves garlic
2 Tbsp olive oil
6 large eggs
½ teaspoon salt
½ teaspoon pepper
5 Tbsp Parmesan cheese, grated
1 Tbsp parsley
1 teaspoon basil
2 Tbsp butter

Drain well and thinly slice the artichokes.
Saute finely chopped garlic cloves in olive oil until soft; add the artichokes and saute 4 minutes.
While sauteing, beat eggs in a bowl with salt and pepper.
Mix artichoke mixture in with eggs; add parsley, basil and cheese.
Lower heat and melt butter in 9 to 10" frying pan.
Pour egg and artichoke mixture into frying pan and spread out evenly.
Cook, uncovered, for 10 minutes (without stirring), then 10 more minutes covered. May be served hot or cold.
