Indonesian-Style Chicken Wings
Makes about 30 wings
These sweet, salty, and tangy wings are incredibly flavorful and addictive!
Ingredients
- 1 teaspoon vegetable oil
- 2 garlic cloves, finely chopped
- 1 one-inch piece fresh ginger, finely chopped
- 3 scallions, thinly sliced, whites and greens separated
- ½ cup low-sodium soy sauce or tamari
- ½ cup light brown sugar
- 2 teaspoons fish sauce
- 2 teaspoons sambal oelek chili sauce
- 2 tablespoons fresh lime juice
- 3 pounds chicken wings*
- ½ teaspoon kosher salt
- 2 tablespoons roasted peanuts, roughly chopped
*Many wings come separated into flats and drumettes, but if only full wings are available, be sure to remove the tips and separate into two pieces.
Preparation
- Heat the oil in a medium saucepan over medium-low heat. Sauté the garlic, ginger, and scallion whites until fragrant. Add the soy sauce and brown sugar. Bring to a simmer and cook over medium-low heat until the liquid reduces by two-thirds and is slightly syrupy. Remove from the heat and stir in the fish sauce, sambal oelek, and lime juice. Let cool to room temperature (sauce will continue to thicken as it cools) and reserve.
- Arrange the chicken wings in the basket and sprinkle with the salt. Place the basket in the air fryer. Select the Wings preset, and press Start/Stop. When Toss Reminder sounds, toss the wings. Replace basket to finish cooking.
- Once the wings have finished cooking, transfer to a large bowl. Toss with the sauce, peanuts, and scallion greens. Serve immediately.
