Buffalo Chicken Dip

Makes about 6 cups

For game day or the next holiday gathering, this dip is sure to please a hungry crowd.

Ingredients

Roast Chicken:

  • 1 whole chicken, about 3½ pounds*
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ lemon

*The air fryer makes a perfect roast chicken, which can be roasted a day in advance for this dip. If desired, substitute a store-bought rotisserie chicken.

Buffalo Dip:

  • Nonstick cooking spray
  • 2 packages (8 ounces each) cream cheese, room temperature
  • ½ cup hot sauce
  • 1 celery stalk, diced
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1½ cups (about 6 ounces) crumbled blue cheese

 

  • Crusty bread, crisp veggies, and tortilla chips, for serving

Preparation

  1. Place the chicken in the air fryer basket. Season with the olive oil, salt, and pepper. Squeeze the lemon over the top of the chicken and then place the juiced lemon half into the chicken’s cavity.
  2. Put the basket in the air fryer. Select Roast with the temperature set to 350°F and the time to 55 minutes. Press Start/Stop.
  3. Once the chicken is done, remove from the basket. Set aside until cool enough to handle, and then shred into evenly sized pieces. Reserve in a large mixing bowl.
  4. Coat the interior of a 9-inch round baking pan with nonstick cooking spray; reserve.
  5. Add the cream cheese, hot sauce, celery, salt, and pepper to the chicken. Mix well. Transfer the dip to the prepared baking pan and top with the blue cheese.
  6. Set the air fryer to Bake at 400°F and set the time to 20 minutes. Press Start/Stop.
  7. Once the unit is preheated, put the pan in the air fryer basket and return the basket to the air fryer.
  8. Carefully remove the pan from the air fryer. Allow to cool for a few minutes prior to serving. Serve with crusty bread, tortilla chips, and crisp veggies.
