Summer Bruschetta

Great use for fresh tomatoes when they're plentiful in the summer."


4 good quality fresh tomatoes, chopped
1 clove garlic
1 tablespoon red onion, chopped
3 tablespoons olive oil
1 1/2 tablespoons vinegar
Fresh basil
Salt and pepper, to taste


1. Mix olive oil, vinegar, garlic, chopped red onion, salt and pepper with a little chopped basil. Pour over chopped tomatoes.

2. Serve on toasted baguette pieces, thinly sliced. Rub toasted baguette pieces with a piece of cut garlic.
