Mediterranean BruschettaUser Submitted Recipe
1 loaf French bread, cut into 1/4” slices
2 Tbsp extra virgin olive oil
1/2 cup crumbled feta cheese
1/2 tsp salt
1/2 tsp black pepper
1/4 cup chopped fresh parsley
1 Tbsp fresh lemon juice
2 cups chopped roma tomatoes
1/2 chopped red onion
1/4 cup chopped kalamata olives
1. Preheat oven to 350 degrees. Place bread slices on a baking sheet, drizzle with olive oil and bake for 15-20 minutes or until just starting to brown.
2. In a large bowl mix together feta cheese, salt, pepper, parsley and lemon juice. Gently fold in the tomatoes, onion, and olives. Let sit at room temperature for 30 minutes and then serves with the toasted bread.
