SENSATIONAL SALMON CAKES
INGREDIENTS
2 cans salmon, drained, flaked & deboned
1 egg, beaten
2 tablespoons chopped garlic
1/2 cup 4c seasoned bread crumbs
1 whole lemon (juiced)
pinch of salt & pepper
1/2 cup Extra Virgin Olive Oil
Instructions

Cook: 25 min
Yield: 4 servings

In a Cuisinart Food Processor, on medium speed, combine canned salmon, beaten egg, garlic, bread crumbs, salt, pepper & juice of half the lemon. After well incorporated but not entirely smooth, remove from processor. Form into salmon cakes and place in a glass baking dish. Drizzle olive on top of cakes and remaining lemon juice. Bake at approximately 350F for approximately 25-30 minutes or until golden brown.
