Texas Caviar

This is a quick and easy recipe"


2 cans black beans drained
2 cups frozen corn
2 small ripe avocados
1/4 cup cilantro
1/2 small red onion
4 tablespoons lemon or lime juice
2 Tablespoons Olive oil
3 Tablespoons Red wine vinegar
Salt and pepper to taste
1/4 tsp cumin or to taste optional


Chop Cilantro and red onion together. Chop the rest of the ingredients and toss all together with juice, oil and vinegar
Allow to set for about 1 hr
Serve with chips
Also great as a salad or for a topping on fish
