Hot Jalapeno Bites

30 Jalapeno Peppers
1 lb. Hot Sausage
1/3 cup Minced Onion
8oz. Cream Cheese
2 tbsp Mayonnaise
1 tbsp Mustard
1/3 cup Grated Parmesan Cheese


Wash peppers. Remove stem end, slice longitudinally, and remove seeds and membranes.
Cook sausage and onion together – drain on paper towels if necessary
Combine other ingredients with sausage and onions, mix well and stuff onto raw halved jalapeno shells. Top with grated cheddar cheese.
Bake in preheated 350° oven for approximately 15 minutes.
