Fresh Tomato and Provolone CrostiniCuisinart Original Recipe
32 slices (1/4-inch) French bread or baguette (approximately 1 loaf)
4 tablespoons olive oil
3 ounces Provolone cheese, cut to fit feed tube
7 plum tomatoes, quartered
32 fresh basil leaves
Place rack in Cuisinart® Toaster Oven Broiler in position B. Brush one side of bread slices with olive oil. Arrange 6 - 8 bread slices on the oven rack (oil side up). Push the Toast button and browning Selection #3. Press the Start/Stop button. Remove toasted bread from oven and reserve; repeat with remaining slices. Set oven to Broil setting and leave door ajar. Press Stop/Start button. Assemble drip tray in baking pan.
Insert the shredding disc in the Cuisinart® SmartPower™ Duet. Place cheese in feed tube and shred using medium pressure. Reserve cheese. Insert the chopping blade. Place tomatoes in work bowl and pulse until chopped medium-fine, about 5 - 6 times.
Top each piece of toast with some chopped tomato and sprinkle with cheese. Place on drip tray and broil until cheese bubbles and melts, about 1 minute. Remove from oven. Top each crostini with a basil leaf and serve immediately.
