Guacamole (recipe follows)
Refried beans (recipe follows)
1 lb. Ground beef
1 small white onion finely chopped
1 teaspoon New Mexico chili powder
1/4 teaspoon crushed red pepper (if you like it hot)
½ teaspoon ground cumin
2 cups grated cheese (Oaxaca Mexican & Monterey jack)
Sliced pickled peppers (optional)
Toppings: guacamole (recipe follows) & Sour Cream
1 large avocado or 2 small avocados
1/2 finely chopped Roma tomato
1 roasted jalapeno chopped (remove seeds)
1 roasted clove garlic finely chopped (cut off any dark brown areas before chopping)
2 tablespoon finely chopped red onion (rinsed)
Salt & pepper, to taste
Dash of sugar
1 tablespoon fresh lime juice
1 tablespoon chopped fresh cilantro
Homemade refried beans - Rinse 2 cups of pinto beans in a large strainer bowl. Fill a large 3 quart saucepan with water & add beans, ½ cup of chopped onion, 1 teaspoon chili powder, 2 slices bacon & 2 cloves garlic crushed. Bring to a boil then cover & let cook on med low heat for 2 hrs. Stir in 1 tablespoon kosher salt and let cook for 30 min. more.
In a large skillet, heat 1 tablespoon lard on a medium High heat. Add beans carefully (with a large lid in one hand to cover as it will pop) then mash with a large fork on med. heat as they cook, add juice from beans as needed to keep a good consistency. Remove from heat & cover. (You can substitute canned pinto or refried beans but the flavor will not be as authentic.)
Preheat oven to 350°.
Brown ground beef and drain (leave a little chunky.) Return to skillet then add onion, & spices & cook on medium low heat stirring frequently until onions are translucent (about 5 min.) Remove from heat & cover.
Spray a large foil lined cookie sheet with nonstick cooking spray and arrange tortilla chips. Top with a layer of refried beans with a tablespoon. Then sprinkle with ground beef mixture. Add sliced pickled peppers if desired. Top with cheese and bake for 15 min. Remove from oven & serve immediately with toppings.
For the guacamole, cut avocado in half & remove seed. Scoop avocado out into a bowl with a spoon & mash with a fork. Add remaining ingredients & stir.
