Mexican chicken scoops

A chicken appetizer that tastes like a mini chicken taco."


3 to 4 skinless boneless chicken breasts
1 bag of Tostito Scoops
1 Pkg taco seasoning
2 fresh tomatoes, diced
1 can sliced black olives
1 8 oz sour cream


Boil Chicken until done and tear in pieces. Place in Cuisinart Mini food processor or mixer to finely shred chicken. Mix Taco seasoning until well blended. Spread a spoonful of chicken in each scoop and top with a dab of sour cream, diced tomatoes and top with a black olive.
