Summer is right around the corner with vacations, beaches, pools, family and fun ahead. However, cooking cannot cease. After all, we all need to eat right? But working over the stove on a hot summer day can be quite unpleasant, even if we love to cook.
There are many foods that can help cool you off during the summer. Some of the least obvious ones are spices. Things like ginger, pepper and horseradish cool down your body by making you sweat. The most obvious foods that cool you down, yet probably the most effective, are fruits and veggies. The high water content helps your body release heat. The only thing better than a cool breeze on a summer day is a cool-down meal.
My favorite summer treat is watermelon! This may come to you as a surprise, but watermelon can be a great main ingredient for a dinner dish this summer. Its sweet taste provides a pleasant contrast to the more common dinner ingredients like cheese and onions. Here’s a cool-down summer salad for you to try:
Watermelon and Feta Salad
1/2 of a large watermelon
4 oz. feta, crumbled
1 red onion, diced
1 handful of fresh mint, chopped
juice of 1 lime
2 tbsp. olive oil
salt and pepper to taste
Cut the watermelon into bite-sized pieces.
Discard watermelon seeds.
Mix watermelon pieces, mint, onion and feta in a bowl.
In a separate bowl, whisk together lime juice and olive oil, add to salad and toss.
Add salt and pepper to taste.
