It’s hard to beat a warm grilled cheese sandwich and a bowl of tomato soup after a long day. Whether you like the comforting classical American cheese version or something a little different such as goat cheese, gruyere or brie, a tasty grilled cheese is as good as it gets.
Who says you have to stop at savory flavors? Cream cheese, a staple in many dessert dishes, is just as tasty in a grilled cheese sandwich as any other cheese can be. Below is a creative recipe for you to try at home.
Sweet Grilled Cheese adapted from Food Network
8 ounces mascarpone, softened
2 peaches, sliced
4 ounces cream cheese, softened
1/2 cup powdered sugar
12 slices pound cake, 1/4-inch thick
3 tablespoons butter, melted
On medium heat, preheat your grill pan.
Using your electric mixer on medium speed, beat the mascarpone and cream cheese until combined. Slowly add the powdered sugar until well incorporate and fluffy.
Spread cream mixture on 6 pound cake slices, add peach slices and cover with the remaining 6 slices. Spread a little butter on each side.
Cook each in the hot grill pan for 2-3 minutes on each side.
