Easy Entertaining with Dinner-Worthy Salads

Having guests over for dinner is a great way for friends and family to come together and catch up, but nowadays everyone’s schedules are always busy and people run around 24/7 with little rest, so it’s hard to commit yourself to cooking and entertaining a large group, even if it is your close friends.  The stresses from planning a meal can be a hassle, but here’s an easy dinner-worthy salad recipe you can make quickly for the warm days and nights of spring and summer!  Let’s try to cut back on the stress, and enjoy good company.

Greek Salad with Grilled Chicken and Pita Bread has always been the #1 favorite in my family.  Using fresh ingredients and adding freshly grilled chicken on top drizzled with tzatziki sauce, lemon juice and olive oil, or balsamic vinaigrette, this is a great meal to enjoy with friends and a chilled bottle of white wine. (I eat this almost every other day in the summer and it never gets old!) 

Greek Salad:

  • Romaine lettuce
  • Plum or grape tomatoes
  • Cucumbers
  • Pitted black Kalamata olives
  • Red or green bell peppers
  • Feta cheese
  • Red onion, sliced

I won’t put quantities, because it really depends on how many people you are serving and how much you want to make.  Just use your judgment and you’ll do fine.  Toss all the ingredients together and it’s already delicious!

Once you remove the chicken and the grill is still hot, add a few pieces of pita bread drizzled with olive oil onto the grill and warm them up for 3-5 minutes, or until you think they're ready.

Add the chicken on top of your salad in bite-size pieces and cut the pita bread in pieces for guests to share.  Pour that wine, sit down to your delicious meal, and enjoy the stress free company of those around you.


Salads are versatile and can be made with a variety of ingredients, so let your imagination run wild.  For heartier salads, try adding sliced steak and some vegetables, such as asparagus and beets.  If you’re a fan of fruits, mandarins, apples, mangoes, watermelon, and pears can be perfect compliments to your salad.  Now you have no excuse not to invite friends over for a great night of conversation and good food.
