Have you heard all the fuss about kale? Everyone is talking about it and for good reasons—it’s one of the healthiest veggies out there! Part of the same family as broccoli and cabbage, kale knocks them both out of the park with its nutritious value! Kale has incredible health benefits—not only does it have a day’s worth of vitamin C in one serving, but it is also an anti-inflammatory and antioxidant. This super-veggie also helps aid in the body’s detoxification system, making you feel better. Researches have even found a large amount of glucosinolates in kale, which is known to be a cancer fighter! Team kale!

By adding this miracle vegetable to your diet 2-3 times a week, you are sure to feel happier and healthier. As an added bonus, kale is a sturdy vegetable that can be incorporated into your diet in a number of great ways. Check out the list we’ve compiled so you can eat kale throughout the day!

For starters, kale is a great addition to a green breakfast juice. Combined with your favorite fruits and veggies, kale will give your blended concoction the extra boost you need for a great morning!

Instead of feeling guilty about eating greasy chips, you can feast guilt-free on kale chips. These can be bought in grocery stores or you can easily make your own at home!

Did you know sautéed kale is an absolutely delicious substitute for sautéed spinach as a side? Give it a try and I am positive you’ll love it! Simply sauté the kale as you would spinach with garlic, but let it cook for a few extra minutes, because of the sturdiness of the leaves.

For lunch, you can even make a raw kale salad. Raw kale has a very specific and study texture, so it may not be for everyone. If you do decide to eat raw kale, be sure to wash it thoroughly and “massage” the leaves to soften the leaves a little.

If that isn’t enough, try making Kale Pistachio Pesto. It would be a great topping for all your favorite pesto meals. We found a delicious recipe on Thrive with Jen Sinkler by food blogger, Shanna Schad, using Kale Pistachio Pesto with grilled halibut. It tastes just as great as it sounds!
