We all have a favorite dessert that we wish can come in all different forms, from pies to shakes to doughnuts! When you think about dessert making, all it really is is combining ingredients together. Naturally, there are many ways to combine ingredients, so why not experiment?
Spending a lot of time in Florida, I’ve developed a strong liking for key lime pie. So much that I’ve craved the refreshing dessert in doughnut form! I personally love the tart flavor, especially for a summer treat and it translates well into this baked treat. Here’s a key lime pie doughnut recipe adapted from Taste and Tell blog.
Baked Key Lime Pie Doughnuts
1 1/2 cups all-purpose flour
1/2 cup sugar
1 teaspoon baking powder
6 ounces plain Greek yogurt
1/3 cup vegetable oil
1/4 cup milk
1 tablespoon key lime juice
2 cups powdered sugar
1/4 cup key lime juice
crushed graham crackers
Preheat the oven to 325°F and grease a doughnut pan.
In a bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
In another bowl, lightly beat the egg, then mix in the yogurt, oil, milk, key lime juice and lime zest.
Gently stir the dry ingredients into the wet ingredients, just until moistened.
Transfer the mixture to a large ziptop bag. Cut off the corner and use the bag to pipe the mixture into the doughnut pan, filling each doughnut about half full.
Bake until the doughnut springs back when lightly touched, 10-12 minutes. Remove from the pan and allow to cool completely.
To make the glaze, mix together the powdered sugar and key lime juice. Dip the tops of the cooled donuts into the glaze, then dip into the graham cracker crumbs.
