Sweet Potato Balls on Pineapple Boats


4 large sweet potatoes
2 tablespoons butter
1 cup parmesean cheese
1 TBS maple syrup
2 TBS orange juice
Olive oil
1 cup toasted breadcrumbs
12 slices cored pineapple (fresh or canned)


Microwave or bake sweet potatoes until soft (One hour in a 350 degree oven/ microwave time and temps vary.) Cool. Peel.

Place the peeled potatoes, butter, parmesan cheese, maple syrup and orange juice to the Cuisinart SmartPower: Compact Portable Blending/Chopping System. Pulse until well blended.
Roll each portion into a ball approximately 2 inches in diameter.
Grease a baking sheet with olive oil. Place cored pineapple slices on sheet.

Roll each ball in toasted bread crumbs and place in the center of each pineapple slice.
Bake for 15 to 20 minutes in a 400 degree oven.
