Shan's Hearty Chicken Lasagna


2 pounds of Ground Chicken
1 bag of fresh spinach
1 large sweet yellow onion
1 clove of garlic
7 tablespoons extra virgin olive oil
1 egg
salt and pepper
1 pack Sazon sin Achiote
1 pack Sazon con Achiote
Season salt
garlic powder
5-6 small mushrooms
3-4 dry bay leaves
1 small container ricotta cheese
1 large jar of tomato sauce
2 packs of mozzarella cheese
cayenne pepper
1 package of lasagna noodles
1 teaspoon of capers
teaspoon of oregano


Put 1/4 cup of tomato sauce to the side. Pre heat oven to 350. In a sauce pan add two tablespoons of olive oil and 1/4 clove of garlic and spinach. Saute until spinach is soft add a pack of Goya Sazon sin Achiote. Set to the side. In a large sauce pan add 3 tablespoons of olive oil remaining garlic and onion (cut up) to the pan until onions are soft. In a large pot boil water adding a two tablespoons of olive oil and a pinch of salt, bring to a boil. Add noodles 4 at a time. cook noodles until they bend but not floppy. DO NOT LET NOODLES SIT IN THE WATER ONCE THEY ARE DONE. Add chicken season with season salt, garlic powder, cayenne pepper, 1 pack Sazon con Achiote, bay leaves, oregano and capers. Mix together cook until chicken is done and crumbled. Drain meat (very important). Cut spinach up into small pieces (scissor will work best). Add chopped spinach to chicken, tomato sauce (except the 1/4 cup) mix well. With the 1/4 cup of sauce add about a table spoon of sauce to bottom of pan so noodles won't stick. In a small bowl mix ricotta cheese with egg and salt and pepper, mix well. Add first layer of noodles. Put second set of noodles in water. Add meat spreading it across the layer of noodles, a few spoons of ricotta cheese spaced across layer of meat. Top with mozzarella cheese. repeat this step finishing with a layer of noodles. Top noodles with the remaining sauce spread evenly. Cover with remaining mozzarella. cover and bake for 20 mins. Remove cover and bake until cheese becomes bubbly.
