Tangy Spare Ribs


Full rack pork ribs
3 ripe apples of choice


1/2 cup Olive oil
4 crushed Garlic cloves
2 tbsp Dijon mustard
1/4 c upCider vinegar
4 dashes Tabasco sauce
1 tbsp. Lemon juice
1 tbsp. Worcester sauce
1 tbsp. Honey


1 cup Brown sugar
2 tsp. Dry mustard
1 tsp. Turmeric
2 tbsp. Paprika
1 tbsp. Garlic powder
1/2 tbsp. Onion powder
1/2 tbsp. Cayenne powder or to taste
1/2 tbsp. Chili powder
1/2 tbsp. Seasoning salt
1/2 tbsp. Cumin


Clean and remove membranes from back side of rack. Cut into serving portions to make marinating easier. Place in zip lock bag. in bowl whisk together marinade ingredients and put into zip lock bag and marinate over night. Whisk the dry rub ingredients and leave in bowl or place in large shaker. Next day remove ribs from bag, pat dry and let sit out on sheet pan until they get to room temperature and dry. Rub the dry rub into the ribs and message into the meat and let sit until bbq or smoker is ready to cook (if using oven cook at 300 for 90 mins or till bone starts to separate from meat). Take the apples and slice into thin slices and cover meat side for the last 30 mins..... Serve and enjoy.... Bon appetit!
