chicken with lemon & garlic


various chicken pieces
5 lemons juiced
2 TBLs olive oil
6 cloves garlic minced
6 potatoes, peeled and sliced
1 cup white wine
1 bottle Italian salad dressing
2 TBLs Italian seasoning
1 TBL salt


Heat oil in 10 in skillet. Remove the chicken from marinate and pat dry. brown the chicken in the olive oil. Once all the chicken is browned place in roasting pan. Deglaze the pan with the juice of the lemons,the wine and the minced garlic. Put the seasoned potato slices on top of the chicken, pour the wine and lemon mixture over the potatoes and bake 1 1/2 hrs @ 350 degrees.
***I also added some of the zest, because I really like lemony chicken
I minced the garlic and sliced the potatoes on my food processor. The 1st time I made this I browned the chicken and deglazed the pan and then put both of them in the fridge(in separate containers) overnight. I sliced the potatoes, and mixed them with the Italian seasoning and the salt in the processor bowl, the next morning and heated up the wine oil lemon mix, put the chicken in the roasting pan, topped with potatoes, poured the sauce over the top and popped the pan in a delayed cooking oven, and when we got home from church, the house smelled soooo good.

Marinate the chicken for at least 4 hrs,(better over night). Mince the garlic,in the food processor, juice and zest the lemons. Slice the potatoes while the chicken is browning and mix with Italian seasoning and salt.
