Yiayia's Pastitsio


3lbs Ground Beef
1lb Macaroni
2 chopped onions
1 clove garlic mashed
1 6oz can tomato paste
6 oz red wine dry
4 oz water
1 cup each grated Parmesan, romano cheese
6 eggs
2 stick butter
1 cup flour
5 cups milk
1 cup half & half
1 tablespoon salt
pepper to taste
1/4 tsp cinnamon
1/4tsp nutmeg


Put 1 stick butter to melt in pot add onions garlic and meat, brown, then add tomato paste, water and cook until dry, add salt, pepper,cinnamon nutmeg wine and let simmer for 5 to 10 minutes, until done while meat is browning boil macaroni according to box directions less 2 minutes, drain, in 12 by 14 inch pan that has been buttered layer some meat sauce, then add some macaroni, then meat sauce and finish with macaroni.
set aside.
In another clean pot melt butter add flour and stir to make a roux do not brown, mix until smooth then slowly pour in milk and half & half, cheeses, stirring so mixture does not stick until thick, take off heat and let cool slightly, beat eggs in mixer and temper with milk mixture then pour in milk and stir. pour over macaroni in pan, Sprinkle with cinnamon, bake at 350 until golden brown about half hour to 45 minutes.
This is how my mom used to make this entree and we all enjoyed it. Good luck
