Mom's Salmon Patties


1 Can Salmon
4 Eggs
1 C. Cracker Crumbs
1/2 Onion - finely chopped
Parsley - chopped
Salt and Pepper
Butter for frying


Remove bones from can of Salmon. Place Salmon in a large bowl.
Add the Eggs and mix well.
Add 2/3 C. crushed Crackers and mix well
Add chopped Parsley and Salt and Pepper.
Add 1/2 C. minced Onion
Mix it all together and form into 6 patties.
Press Patties into the remaining cracker crumbs and coat both sides.
Fry the patties in the melted Butter and serve with Creamed Peas.
Melt 2 Tbsp. Butter in a saucepan and add 2 Tbsp. Flour, stirring with a whisk. Add Salt and Pepper to taste.
Whisk in 1-1/2 C. Milk and cook until it begins to thicken. When it is thick, add 1 can Sweet Green Peas which have been drained. Cook until the Peas are warm. Serve over the Salmon Patties.
