Tomatillo Shrimp Tacos


*Shrimp Ingredients*
2 teaspoon olive oil
2 lb medium shrimp, peeled and deveined
2 cloves garlic
1/4 teaspoon sea salt
1/2 teaspoon ground red pepper
3/4 teaspoon chili powder

*Tomatillos Salsa Ingredients*
4 medium tomatillos, coarsely
1 avocado, peeled
1 serrano pepper, seeded and chopped
1/3 cup plain yogurt or sour cream
3 tablespoons chopped cilantro
2 tablespoons apple cider vinegar
1 tablespoons lime juice
2 teaspoons sugar
1/8 sea salt

*16oz package of 8" tortillas*


For one hour marinate and refrigerate shrimp in combined olive oil, garlic, sea salt, red pepper and chili powder.

In Cuisinart Food Processor combine and blend tomatillos, avocado, serrano pepper, sour cream, vinegar, lime juice, sugar and sea salt.

Heat a large nonstick skillet over medium heat. Saute shrimp until they are warm throughout. Approximately 4-6 minutes

Individually warm both sides of a tortilla in a hot medium nonstick skillet. Using a plastic spatula, add a good amount of shrimp to the warm tortilla. Top with 1/4 cup or more tomatillos salsa. Serve. Repeat steps for each tortilla.
