Cheesy Bowties


8 ounces sharp cheddar cheese
1 cup plus 2 tablespoons whole milk
1 large egg
1-1/2 tablespoon unbleached, all-purpose flour
1/2 teaspoon kosher salt
1 pound package bowtie pasta, cooked according to manufacturer’s instructions (any pasta shape can be substituted)


Assemble Cuisinart food processor with shredding disc and shred the cheddar cheese. Remove the shredded cheese and reserve in a mixing bowl.
Place milk in a saucepan over medium heat until it just simmers.
Place the egg, flour, and salt in food processor work bowl fitted with metal
chopping blade. Process for about 20 seconds. Scrape work bowl. Add the cheddar cheese and pulse until mixture comes together about 20 to 25 pulses. With machine running pour in the hot milk, process until the mixture is smooth and homogenous, about 30 to 40 seconds.
Pour the mixture back into saucepan and place over medium heat. Stir with a whisk until creamy, smooth and thickened, about 15 to 20 minutes.
Once sauce is ready, mix together with hot, cooked pasta. Serve immediately.
