Fish Sticks


12 white bread slices, toasted
3 large eggs
2 teaspoons lemon juice
1/4 teaspoon kosher salt
1 pound mild, white fish fillet, like sole, trimmed and cut into 1 inch pieces
1/2 cup unbleached, all-purpose flour


Preheat oven to 375°F. Prepare a baking sheet lined with aluminum foil and covered with a film of olive oil.
Process the toasted slices in the Cuisinart food processor fitted with the metal chopping blade. Remove and reserve in a small mixing bowl.
Process 2 eggs for about 10 seonds, remove and reserve in a small mixing bowl.
Process 1 egg with lemon juice and salt. Add fish pieces and pulse about 20-25 times. Form fish mixture into ten, 1-1/2 ounce sticks.
Line up the bowls of ½ cup flour, egg wash, and toasted breadcrumbs.
Dip each fish stick into the flour, then the egg, then the breadcrumbs. Be sure to shake the excess off after each step.
Place the fish sticks on prepared baking sheet and place in oven for about 30-35 minutes. Turn the sticks halfway through bake time.
Serve with tartar sauce.


Makes about ten, 1-1/2 ounce sticks
