Chicken Satay


5 cloves garlic, chopped
4 tbs. soy sauce
4 tbs. sugar
1 cup peanut butter
1/2cup coconut milk (optional)
1 lb. skinless chicken breast cut into 1 inch cubes


1. Mix all ingredients (except chicken) using the stand mixer, and then pour everything in a saucepan.
2. Over low heat, Cook until peanut butter has melted and ingredients are well mixed. Cool mixture to room temperature.
3. Pour 3/4 of peanut butter mixture over the meat .Marinate and refrigerate for 30 minutes (overnight is even better). Reserve the rest of the peanut butter sauce for basting.
4. Thread meat onto skewers and cook on a medium grill or under the broiler for 15 minutes (or till cooked) turning occasionally and basting with remaining sauce mixture until golden brown and thoroughly cooked.
