Broccoli Soup & Quick Yeast Bread
An easy, creamy, broccoli soup and the quickest, easiest, yeast bread you've ever seen.
Ingredients:
Bread:
- 2.5 cups flour (I used unbleached all purpose)
- 1.5 cups warm water (105 to 115 degrees)
- 1.5 tsp active dry yeast
- 1 tsp salt
- 2 T olive oil
Soup:
- 1 medium onion: diced
- 3 cloves garlic: minced
- 2 T olive oil
- 3 - 4 Stalks Broccoli (4-5 cups processed)
- water
- 1 cup half and half
- 1 cup shredded cheddar cheese
- Salt and Pepper
Instructions:
Bread:
- Sprinkle yeast over warm water and let sit for 5 minutes.
- Put flour and salt in food processor and pulse a few times.
- Whisk water and yeast until yeast is dissolved.
- Add yeast mixture and olive oil to processor and process for 30 seconds to a minute.
- Scrap batter into a greased 9 inch cake pan or pie plate.
- Cover with an upside down plate and let sit for 20 minutes.
- Preheat oven to 400°
- Place bread in oven and bake for 20-30 minutes
- Remove bread from pan and place on cooling rack.
Soup:
- Saute onion and garlic in oil over med-low to med heat, until softened
- Roughly chop broccoli, including peeled stalks, and place in food processor.
- Process until the consistency of a very rough meal. (This may need to be done in batches)
- Put broccoli in pot and add water to just under level with the broccoli.
- Add two healthy pinches of salt.
- Bring to a boil and simmer uncovered for 15 minutes.
- Stir in half and half and cheese.
- Salt and pepper to taste.
- If desired, puree soup with implement of choice.
