Broccoli Soup & Quick Yeast Bread

An easy, creamy, broccoli soup and the quickest, easiest, yeast bread you've ever seen.

 


Ingredients:

Bread:

  • 2.5 cups flour (I used unbleached all purpose)
  • 1.5 cups warm water (105 to 115 degrees)
  • 1.5 tsp active dry yeast
  • 1 tsp salt
  • 2 T olive oil
Optional: 1 tsp onion and/or garlic powder, chopped fresh onion and/or garlic, shredded cheese, chopped olives, you get the idea.

Soup:
  • 1 medium onion: diced
  • 3 cloves garlic: minced
  • 2 T olive oil
  • 3 - 4 Stalks Broccoli (4-5 cups processed)
  • water
  • 1 cup half and half
  • 1 cup shredded cheddar cheese
  • Salt and Pepper

 

Instructions:

Bread:

  • Sprinkle yeast over warm water and let sit for 5 minutes.
  • Put flour and salt in food processor and pulse a few times.
  • Whisk water and yeast until yeast is dissolved.
  • Add yeast mixture and olive oil to processor and process for 30 seconds to a minute.
  • Scrap batter into a greased 9 inch cake pan or pie plate.
  • Cover with an upside down plate and let sit for 20 minutes.
  • Preheat oven to 400°
  • Place bread in oven and bake for 20-30 minutes
  • Remove bread from pan and place on cooling rack.


Soup:
  • Saute onion and garlic in oil over med-low to med heat, until softened
  • Roughly chop broccoli, including peeled stalks, and place in food processor.
  • Process until the consistency of a very rough meal. (This may need to be done in batches)
  • Put broccoli in pot and add water to just under level with the broccoli.
  • Add two healthy pinches of salt.
  • Bring to a boil and simmer uncovered for 15 minutes.
  • Stir in half and half and cheese.
  • Salt and pepper to taste.
  • If desired, puree soup with implement of choice.
