Mexican Tamales w/ Chorizo
This the best tamales that I have ever tasted. You need a Cuisinart Food Processor to make the masa. Serve with sour cream and hot sauce.
Ingredients:
1 pound mexican chorizo
2 poblano chilies
1/4 cup chopped onion
1 cup chopped tomato
8 oz ColbyJack cheese cubes
1 3/4 cup masa for tamales
2 ears corn
1 cup warmed chicken stock
1 1/2 teaspoons baking powder
2 tablespoons sugar
1/4 cup lard or shortening
Dried Corn Husks or use corn husks from fresh corn
Instructions:
Filling:
Dice onion and poblano chilies to same average size. Chop tomato to same size.
Saute onion and chilies till soft, then add the tomato and chorizo and saute 10 to 15 minutes till done.... set aside to cool
To prepare masa...
Put 1 1/2 cups masa into a bowl and add the 1 cup chicken broth.. mix and allow to cool.
Cut kernels from 2 ears of corn and add to your Cuisinart Food Processor and process 30 seconds.
Add the cooled masa to your Cuisinart Food Processor work bowl.
Add the baking powder, sugar, and lard.
Process for 1 1/2 minutes.
Soak the dried corn husks in sink in warm water for 10 minutes, separate them and rinse to clean each one separately as you take them out of the sink.
Spread 1/4 cup of masa onto a corn husk and put small amount of filling and add 4 cheese cubes, roll up and tie with a strip of corn husks... repeat until you run out of ingredients.
Steam them standing up for 1 1/2 hours.
Serve with sour cream and hot sauce with rice and beans on the side.
