Chicken Boti Kababs - Traditional Grilled Spicy Indian Drumsticks

A replication of traditional clay oven cooked drumsticks using the Cuisinart smart stick and the Cuisinart grill

 


Ingredients:

1 tbsp whole coriander
1 tbsp whole cumin
1 tbsp whole paprika
3/4 tbsp whole black peppercorns
2 inch piece peeled ginger
4 pods garlic
1/2 cup fresh cilantro
4 green chilles
1/2 cup yogurt
1.5 limes
2 tsp salt
2 lbs skinless drumsticks

For basting and finishing
1 onion, sliced
1 bell pepper, sliced
oil as needed
extra lime
Chaat masala

 

Instructions:

1. Place the whole spices, ginger, garlic, cilantro, chillies and yogurt into the bowl of the smart prep processor.
2. Squeeze the juice of the lime.
3. Blend for a good 3-4 minutes till the mixture is a well blended paste.
4. Apply over the chicken and shake the salt and marinade for a good 6 hours or longer.
5. Heat the grill and add some oil.
6. Place the chicken and cover and cook for 10 minutes.
7. Remove the cover and add the onions and pepper and cook for another 10 minutes.
8. Arrange on a plate and add extra lime juice and chaat masala.
