Lasky's Luscious Latkes

Delectable and simple potato pancakes used for many generations in my family. Made with my mother in law's 25 year old wonderful food processor.

 


Ingredients:

4 peeled and quartered Russet Potatoes
1 medium peeled and quartered onion
2 eggs at room temperature well beaten
2 Tbsp Matza Meal
1 tsp Kosher Salt
1/4 tsp black pepper
Vegetable oil as needed

 

Instructions:

Use shredder blade on Cuisinart's Food Processor to shred potatoes and onions. Keep potato shreds from turning gray by immersing in ice water between batches. Press ALL moisture out of shreds in collander or cheese cloth. Mix eggs into potatoes than mix in matza meal, salt and pepper. Use icecream/muffin scoop to drop dollops of batter into 1/4" of preheated 350 degree (or lighty bubbling, not smoking) hot oil in deep pan on stove. Flatten with spatula then turn after 2-3 minutes or when edges are golden brown. Brown second side another 2 minutes. Transfer latkes onto paper towel lined plate to absorb oil. Keep them hot in a 200 degree oven or warm setting on the griddle while frying subsequent batches. Serve hot with apple sauce or sourcream.
