Smoked the Turkey
Smoking the Turkey with HomeBBQ.com.
Ingredients:
1 - 10 to 12 pound turkey
olive or peanut oil
brine (see brine recipe)
Fresh herbs (rosemary, thyme, basil, parsely)
1 - onion quatered
1 to 2 celery hearts
1 - Lemon halved
Kosher Salt
Seasoning
1 - tbls - salt
1 - tbls - pepper
(We used HomeBBQ.com World Famous Rib Rub)
Basic Brine
1 cup Course Kosher Salt
1 - cup Sugar
1 - gallon - Water
2 - tbsp - Rub
Bring water to a rapid boil, then add kosher salt and dissolve, then add sugar and dissolve, then add rub and dissolve. Let brine cool and refrigerate.
Instructions:
Clean turkey and remove all giblets from cavity.
Brine Turkey for a minimum of 10 to 12 hours (approximately 1 hour per pound)
Remove from brine and rinse.
Oil outside of turkey with olive oil or peanut oil
Rub inside of cavity with halved lemons, then rub inside of cavity with kosher salt.
Place fresh herbs, onion, and celery hearts in cavity. Using heavy duty aluminum foil seal off cavity.
Season outside of turkey with desired seasoning.
Heat cooker to desired temp (300 to 325)
Cook uncovered for (15 to 20 minutes per pound) until the breast reaches 160 - 165
And thigh reaches 175 to 180.
Let stand for a minimum of 15 to 20 minutes, carve and serve.
