Fall-Off-the-Bone Ribs

" Barbecued Ribs"


2 full racks of pork ribs with minimum fat layer, halved
Yellow onion, quartered
6 cloves garlic
Sprigs fresh oregano and/or thyme
10 whole black peppercorns
Four bay leaves
Lite beer (enough to come half-way up sides of the stacked ribs in roasting pan)
Water(enough to come to top of stacked ribs
BBQ sauce (bottled or homemade)


Place rib half-racks in roasting pan, pour beer over/around ribs and follow with water. Sprinkle onion, garlic, celery, celery leaves and herbs on/around ribs. Drop in bay leaves & peppercorns. Bring to a boil and parboil over medium to medium-low heat for 30-45 minutes. Drain liquids and discards solids. Clean "goop" out of pan. Spread a light coating of honey over top side of ribs and return to reasting pan. Roast in over or on indirect heat of grill at 275 for 2 1/2 to 3 hours. Remove racks and coat with bbq sauce. Return to pan and roast another 2-3 hours, testing occasionally after two hours for doneness. After removing from pan, pour pan juices over the ribs on the serving platter.
