Kabobs/Cucumber Yogurt

Ingredients

1 lb lb(454 g) ground beef or lamb
1/4 cup raisins(chopped)
1/4 cup dry breadcrumbs
2 tbsp minced fresh coriander
2 tbsp tbsp minced gingerroot
1 tbsp garlic
1/2 tsp ground cinnamon
1/2 tsp pepper
1/2 tsp dried oregano
1/2 thyme
1/4 tsp salt
1/4 tsp ground cumin
4 Greek-style pita breads(no pocket)
2 cups shredded leaf or romaine lettuce
1 1/3 cups cucumber/yogurt dressing

Instructions

Blend first 12 ingredients together. Divide into 12 patties and form into a flattened elongated egg shape. Thread onto wooden skewers that have been soaked in water. Grease grill/med-high heat. Lay out skewers and close the lid. Check after 5 minutes and turn skewers (meat thermometer inserted in centre should be 160°F). Grill pita on both sides until slightly crisp, 2 minutes. Serve kabobs, lettuce and cucumber yogurt dressing in pitas.


CUCUMBER YOGURT DRESSING: Combine all together- 1 cup plain yogurt, 1/2 cup grated peeled cucumber, 1 green onion thinly sliced, 1 tsp l lemon juice, 1/2 tsp salt and sugar. Let stand for 10 minutes before serving. Makes 1 1/3 cups.
