1/4 cup whole milk ricotta cheese
2 large eggs
1 Tbs real maple syrup
1/2 tsp vanilla extract
1 Tbs butter
2 cups fresh berries, lightly smashed
maple syrup, for topping
In a medium sized bowl vigorously mix together the ricotta, eggs, 1 Tbs maple syrup and vanilla extract. Heat a nonstick pan over medium and add 1/2 Tbs butter. When the butter has melted pour half of the batter into the pan. After the first side has set, about 3 minutes, flip and cook the other side for 2-3 minutes. Top with mashed berries and additional maple syrup. Serve and enjoy!
