sausage bean soup
16 oz cranberry beans
2 cans beef broth
1 can diced tomatoes
1/2 c dried tomatoes in oil
2 TB oil
2 carrots chopped
2 stalks celery chopped
1 onion chopped
1 jalapeno pepper chopped
8 oz breakfast sausage links sliced
1 lb smoked sausage (Kielbasa)halved and sliced
1 TB dried thyme
1 TB dried oregano
1 TB liquid smoke
Feta or Parmesan cheese for garnish.
Place beans in 8 cups water. bring to boil. Cover and let sit 1 hour
Meanwhile chop vegetables.
Heat oil in large soup kettle.
Add sausages and brown. Remove with slotted spoon. Set aside.
Add vegetables to pan and cook until soft.
Add rest of ingredients except beans and sausage and cheese.
Put pan on burner on simmer
Drain beans and rinse
Add beans to pan.
Cover and let simmer at lease 1 hour.
Return to heat and add sausages.
Cook until heated through
Place in bowls and sprinkle feta or Parmesan over top.
Cook vegetables until soft.
